Chicken Fillets with Okra & Cherry Tomatoes

Ingredients
- 700g chicken fillet, cut into strips
- 300g fresh or frozen okra
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 2 tbsp chopped parsley
- 600g cherry tomatoes
- 100ml vinegar
- 200ml dry white wine
- 80ml olive oil
- Salt & freshly ground pepper
Instructions
- In a bowl, soak the okra in vinegar and 200ml water for 1 hour to reduce their natural stickiness. Drain and dry with paper towels.
- Heat olive oil in a large pan over medium heat and sauté the chicken fillets for 2-3 minutes until golden. Remove and set aside.
- In the same pan, add the okra and onion and sauté over high heat for 4-5 minutes until golden brown.
- Add the wine and let the alcohol evaporate for 2-3 minutes.
- Add the garlic, cherry tomatoes, 200ml water, salt, and pepper, then return the chicken fillets to the pan. Simmer for 8 minutes until the sauce thickens.
- Sprinkle with chopped parsley and serve hot.
