Chicken Fillets with Okra & Cherry Tomatoes

Ingredients

  • 700g chicken fillet, cut into strips
  • 300g fresh or frozen okra
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 2 tbsp chopped parsley
  • 600g cherry tomatoes
  • 100ml vinegar
  • 200ml dry white wine
  • 80ml olive oil
  • Salt & freshly ground pepper

Instructions

  • In a bowl, soak the okra in vinegar and 200ml water for 1 hour to reduce their natural stickiness. Drain and dry with paper towels.
  • Heat olive oil in a large pan over medium heat and sauté the chicken fillets for 2-3 minutes until golden. Remove and set aside.
  • In the same pan, add the okra and onion and sauté over high heat for 4-5 minutes until golden brown.
  • Add the wine and let the alcohol evaporate for 2-3 minutes.
  • Add the garlic, cherry tomatoes, 200ml water, salt, and pepper, then return the chicken fillets to the pan. Simmer for 8 minutes until the sauce thickens.
  • Sprinkle with chopped parsley and serve hot.
