Chicken Caesar Salad with Crispy Bacon

Ingredients

  • 1 medium iceberg lettuce, torn into large bite-sized pieces
  • 1 chicken breast, grilled or pan-seared and sliced
  • 4-5 slices bacon, cooked until crispy and broken into pieces
  • 1 cup croutons

For the croutons (optional)

  • 2 slices bread, cut into cubes
  • 1 tbsp extra virgin olive oil
  • 1 garlic clove, finely chopped

Sauté the bread cubes in olive oil with the garlic until golden and crispy.


For the dressing

  • 3 tbsp mayonnaise
  • 1 tbsp mild mustard
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tbsp white vinegar
  • Salt
  • Freshly ground black pepper

Tip

If the dressing is too thick, add 1 tablespoon of water or a little olive oil until it reaches the desired consistency.


Method

1. Prepare the salad

Place the iceberg lettuce in a large serving bowl.

2. Add the toppings

Add the sliced chicken, crispy bacon, and croutons.

3. Make the dressing

In a small bowl, whisk together the mayonnaise, mustard, Parmesan, lemon juice, vinegar, salt, and pepper until smooth.

Pour the dressing over the salad and toss gently to coat all ingredients evenly.

4. Serve

Serve immediately and finish with Parmesan shavings or extra grated Parmesan cheese for an authentic Caesar salad experience.
