Christmas Stuffed Chicken

Ingredients

  • 1 large whole chicken
  • 1 kg apples
  • 500g potatoes
  • 600g ground beef or chicken mince
  • 300g chestnuts
  • 200g dried plums
  • 200g dried apricots
  • 100g pine nuts
  • 1 onion, finely chopped
  • 2 tbsp tomato paste
  • 1/2 tsp nutmeg
  • Salt & pepper

Instructions

  • Sauté onions & minced meat in a pan. Add tomato paste, cook for 15 minutes.
  • Add chopped apples, plums, chestnuts, pine nuts, apricots, nutmeg, salt & pepper.
  • Stuff the chicken and bake at 190°C for 40 minutes.
  • Add remaining apples, chestnuts & apricots and continue baking for 10 more minutes.
