Christmas Stuffed Chicken

Ingredients
- 1 large whole chicken
- 1 kg apples
- 500g potatoes
- 600g ground beef or chicken mince
- 300g chestnuts
- 200g dried plums
- 200g dried apricots
- 100g pine nuts
- 1 onion, finely chopped
- 2 tbsp tomato paste
- 1/2 tsp nutmeg
- Salt & pepper
Instructions
- Sauté onions & minced meat in a pan. Add tomato paste, cook for 15 minutes.
- Add chopped apples, plums, chestnuts, pine nuts, apricots, nutmeg, salt & pepper.
- Stuff the chicken and bake at 190°C for 40 minutes.
- Add remaining apples, chestnuts & apricots and continue baking for 10 more minutes.
